Will I have admin rights once the site is live?

That depends on the type of website you choose. Upon a CMS website going live, you will be supplied with full administration login details to be able to effectively self-manage your website. For a basic static site, you will be given the html files, which you are free to edit and update, but you will not have open access to the server.
